Sicilian cuisine takes its many flavors from the seas, a variegated varied landscape and, most importantly, from a blend of cultures which, through a great many centuries, have produced a distinct cuisine whose reputation reaches far and wide.
This cooking class is held at a superb wine estate that is located on a gentle slope of the Etna, Europe’s highest active volcano. There, you will learn and enjoy the food and wine traditions of Sicily, particularly those that pertain to the Etna area. The chef will guide you through a hands-on cooking lesson that will give you a good knowledge of Sicilian food, while enabling you to replicate those recipes back home.
Mid-way through the class, we will take a well-deserved break to discover the estate’s organic wines and extra virgin olive oil.
The menu you will be preparing will be based on seasonal local products.
As an example, you may prepare and enjoy the following menu:
Antipasti – a selection of cheeses and salumi from the Etna region, dried tomatoes in oil, dressed olives from the estate, orange and caper salad or sweet and sour red peppers, etc.
Primi - Fava beans and wild fennel soup - Polpette (meatballs) in lemon and orange leaves
Secondi - Casarecce pasta served with pork sauce - Veal roulade Catania style and cauliflower in wine dressing
Dolce - Traditional cinnamon jelly and home-made biscuits
The meal includes a selection of the estate’s wines.
